WASTE: No single-use plastics. Kitchen scraps feed garden beds, compost toilets conserve water, and construction debris becomes furniture or sculpture. Every output is rerouted into purpose.

Culinary partnerships include exclusive sourcing from women-led farms in Sikinos and Tinos, as well as seed-saving cooperatives that protect heirloom varieties of lentils, oregano, and fava. The in-house kitchen composts all organic waste, some of which supports local village gardens.
Gundari also funds the preservation of the island’s ancient donkey paths through a trail restoration initiative, and sponsors workshops in traditional basket-weaving and Cycladic ceramics.
